Fill drinking glass with ice. In a mixing glass also filled with ice, stir together 2 Rye, 0.5 Simple Syrup, 1 dash Angostura, 3 dash Peychaud. Remove ice from drinking glass, and rinse with absinthe. Pour drink into said glass. Top with oil from flamed lemon peel. Discard lemon peel. [Cognac is the historical choice, but I think rye works better. It’s a very tasty drink.]
