Bring 4 oz of water to boil. Add 1.5 tsps of nutmeg, 1 tsp ginger, 3 cloves, 0.25 tsp mace, 3 allspice berries, and 1 cinnamon stick. Simmer for 5 minutes. Add 10 oz (weight) of sugar and 2 bottles of either madeira wine or sherry, turn off stove, and let sugar dissolve. Beat 6 egg whites into stiff peaks and 6 yolks separately. In a large bowl, fold the yolks into the whites. Then, VERY SLOWLY, add the heated spiced wine to the egg mixture while mixing thoroughly.
